Boneless Pork Chop Loin Recipe

Was looking for a new recipe and came across one for boneless pork chop loin in the P90X recipe book. I did a few modifications but basically…

Ingredients:

  • Boneless Pork Chop Loin
  • Sliced Red Apple
  • Sliced Potato
  • Olive Oil
  • Cinnamon, Salt, & Pepper

Directions:

  1. Preheat oven to 350F.
  2. On a cooking sheet lay down some foil and lightly coat it with olive oil.
  3. First layer the potatoes.
  4. Then the boneless pork chop loin. Season with cinnamon, salt, and pepper.
  5. Finally, add the apples on top.
  6. Wrap it up in foil and cook for 40 minutes.

Modifications in the future:

The meat turned out a little dry for me, so I’ll put in a little more olive oil (maybe a slight coat in between the potatoes and pork). Also, maybe I’d season the potatoes with rosemary and garlic salt. And I’d load up on the apples. They were so DELICIOUS that I wish I had put more.

Monday's Boxing Analogy

Sometimes I come in on Mondays, arms swingin’ like I’m Pacquiao fightin’ Hatton, ready to take it down (and the week) in round 2.

This week, Monday has me on the ropes like Cotto on Pacquiao in the early rounds. It’s rough even though I’m makin’ it look like it’s not that bad. I’m sure though that by Friday I’ll have a TKO.

2009 Honolulu Marathon: T minus 30 days

So I started off the week with these goals:

This Week’s Mile Count Goal: 27 | Longest Run Goal: 14

I hit a setback on Tuesday when I came down with one of my infamous migraines. The worst ones are when I’m far from home and I gotta drive through the pain and nausea. Thus, was the case Tuesday night in Norco, CA. Sorry to the dark sedan’s owner who found a wet lumpy surprise next to their car at a local high school that night. I really had to yak:(

Ok, anyhoo… took a couple of days to recover (yes, my migraines are that bad). So now my mile count is at 11 miles for the week and the goal is run 15 miles tomorrow morning before heading off to Vegas for the Pacquiao v. Cotto fight. *Deep breath*

While I’m pretty sure I’m not going to hit my mile count goal, I’m pretty sure I’ll be able to surpass my longest run goal. *Crossing fingers*

So I’ve never had an FRS energy drink before but I’ve heard (and read) some good reviews. Drinkin’ this before my 8.5 mile run… let’s hope it sits well with the tummy;)
